Meatball Sandwich

Ingredients:

  • 1 pound lean ground beef
  • 1 cup bread crumbs
  • 1 large carrot, finely chopped
  • 3 cloves garlic, minced
  • 1 samll onion, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp grated Parmesan cheese
  • 1 egg, beaten
  • salt and pepper to taste
  • 1 large jar of spaghetti sauce
  • extra-virgin olive oil
  • slices of provolone cheese
  • French baguette

Directions:
Preheat oven to 350 degrees F.

In a large bowl, mix together the ground beef, bread crumbs, carrots, onions, 2/3 of the minced garlic, parsley, Parmesan cheese, and egg.

Season with salt and pepper and mix thoroughly with your hands.

Shape into meatballs about the size of golf balls and line them up in a baking dish.

Place in the preheated oven until beef is cooked through (about 20-25 minutes).

Cut the baguette lengthwise and make a trench for the meatballs to rest on by removng some of the bread inside.

Brush with olive oil and lightly season with salt and pepper.

In a saucepan over medium heat, saute the remaining minced garlic in some olive oil until aromatic and add the spaghetti sauce. Cook until sauce starts to bubble.

Take the meatballs from the oven and transfer them to the sauce. Mix until all meatballs are covered in sauce.

Spoon onto the baguette and top with slices of provolone cheese.

Place baguette into the oven for 1-2 minutes to melt the cheese.

Cut into servings sizes and enjoy.
