Ingredients for Meatballs:
- 1 pound lean ground beef
- 1 carrot, finely chopped
- 1 cup bread crumbs
- 1 egg
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chopped parsley
- 1/2 tsp salt
- 1/4 tbsp ground pepper
Directions for Meatballs:
In a mixing bowl, mix all ingredients by hand until you achieve a nuniform consistency.
Form into meatballs and set aside in fridge.
Ingredients for Sauce:
- 2 cans chopped tomatoes
- 1 small can tomato paste
- 2 cups beef broth
- 1 onion, chopped
- 1/2 head of garlic, finely chopped
- 1 bay leaf
- 1/2 tbsp dried oregano
- 2 tbsp cup olive oil
- 1 tbsp sugar
- 2 tbsp salt
- 1/2 tsp ground pepper
Directions for Sauce:
Heat up olive oil in a large pan over medium heat.
Saute onion and garlic until mildly brown.
Add in chopped tomatoes, bay leaf, oregano, salt, and pepper.
Cook for 3-4 minutes.
Add beef broth and stir in tomato paste.
Bring to a boil and reduce to low heat.
Cover and continue cooking for 1 hour (but check occasionally to make sure liquid doesn’t dry up).
Add in meatballs and cook for 30 more minutes.
Serve over cooked spaghetti (cooked per package instructions).
