Ingredients:
- 8 boneless (skinless) chicken breast, cut in half
- 8 slices deli ham, cut in half
- 8 slices cheddar cheese, cut in half
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup all-purpose flour
- 1/4 cup fresh parsley, chopped
- 2 eggs
- 2 tbsp vegetable oil
- extra virgin olive oil (optional)
Directions:
Using a cleaver or meat mallet, flatten the halved pieces of chicken.
Place half a slice of ham and half a slice of cheese on each piece of chicken.
Roll up the chicken and secure with a toothpick.
In a mixing bowl, combine bread crumbs, Parmesan, parsley, salt, and pepper.
In another bowl, whisk the 2 eggs.
Put flour on a wide plate and scatter evenly.
Roll the the chicken rolls in flour, the dip in egg, then roll in the breadcrumb mixture.
Evenly grease a baking tray with the vegetable oil (or use a cooking spray instead).
Arrange the roll-ups on the greased baking tray with the seams facing down.
Optionally drizzle the chicken with olive oil.
Bake for 30 minutes in a preheated oven at 375 degrees F or until chicken is no longer pink.
Remove toothpicks before serving.
Goes great with baked potatoes.
