Ingredients:
- 1 pound cod fillets
- 4 large potatoes
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp ground black pepper
- 1 cup skim milk
- 1 egg
- vegetable oil for frying
Directions:
In a mixing bowl, mix together flour, baking powder, salt, and pepper.
Add in the egg and milk and stir until batter is smooth. Set aside for 10-15 minutes.
Pour about 1/2 cup of vegetable oil in a large frying pan over medium-high heat.
When oil is hot enough, fry the potatoes until just about tender. Place on paper towels and set aside.
Coat the fish in the batter one at a time and place them in the hot oil.
Fry the fish until golden brown on all sides. Place on paper towels to remove excess oil.
Fry the potatoes again for another minutes until golden brown. This makes the chips more crispy.
