Oven Roasted Potatoes


  • 2 pounds of small potatoes, quartered
  • olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme

Preheat oven to 450 degrees F.
Using a mortar and pestle, mix and pound black pepper, dried rosemary, and dried thyme.
Place potatoes in a roasting pan. Drizzle with olive and toss.
Add salt and mixture from the mortar and pestle.
Toss some more until potatoes are evenly coated.
Bake in preheated oven for 20-25 minutes
Occasionally check and toss with a wooden spoon to prevent burning.
