Smoked Salmon Bruschettas

Smoked Salmon Bruschettas


  • 1 cup smoked salmon, sliced to 1-inch pieces
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/2 cup shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 lemon
  • some extra virgin olive oil
  • salt and pepper to taste
  • 1 French baguette, toasted and sliced

In a large bowl, mix together the salmon, tomatoes, black olives, Parmesan cheese, and garlic.
Squeeze the lemon then season with salt and pepper and toss everything together.
Drizzle with olive oil and then serve on toasted slices of bread.
