- 1 pack manicotti pasta
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 jar Italian spaghetti sauce
- 2 eggs
- 1 tsp finely chopped fresh parsley
- salt and pepper to taste
Preheat oven to 350 degrees F.
Cook manicotti pasta per package instructions.
In a large bowl, combine ricotta, mozzarella, and Parmesan.
Whisk the eggs in another bowl and add to cheese mix.
Add chopped parsley, salt and pepper. Mix well until consistent.
Cover the bottom of a baking dish with half a cup of spaghetti sauce.
Fill each manicotti shell with the cheese mixture, and line them up over the sauce .
Pour remaining sauce over the manicotti.
Sprinkle with some more Parmesan and mozzarella.
Bake for 30-40 minutes or until bubbly.
